Roasted Veggie Enchiladas

Zucchini and squash seem to be bursting from everyones gardens around here so i thought I'd post my new favorite recipe from my friend Sarah. We love it and even my boys will devour it.

Roasted Veggie Enchiladas

½ c. onion
1 red pepper, chopped
1 zuccini, chopped
1 yellow squash, chopped
1 c. frozen sweet corn
1 can olives
1 can black beans- drained
1 16 oz. green chili enchilada sauce ( I usually use 2 cans)
1/2 t. ground cumin
½ t. oregano
garlic salt
grated cheese
tortillas (10-12)

Saute onion, pepper, zucchini, squash until tender. Add corn olives, beans and spices. Roast until most moisture in gone. Spray 9x13 pan, spread layer of enchilada sauce on bottom. Fill tortillas with mixture and cheese. Top with remaining sauce and cheese if desired. Bake 350 for 30 min. uncovered.

When you use the uncooked tortillas from Costco with fresh veggies from the garden it's a recipe for pure deliciousness!!

what WE didn't do this week

Fully utilizing one last military perk. I sat by and read People magazine while Tom and Eddie packed my entire house. These men are miracle workers. They packed in 1 1/2 days what it would have taken me 30 days to do.



These men are very good at puzzles. They bring everything out into the driveway and then start placing it in the truck. Floor to ceiling. Not a space is left. It's very fascinating to watch. Our stuff went from the front of the truck to the doors. Now that's a lot of stuff!!


The boxes are gone. Our house is empty. It's time to say goodbye to our little house on Partridge Drive and to the military life we've lived the past few years.

So without further ado, So Long, Farewell, auf weidersehn, goodbye..............Mtn. Home!

Boating and a Birthday

We drove for 2 1/2 hours and I personally thought that there wasn't a reservoir that existed at the end of the winding 2 lane road we were on. We hardly passed anyone except for some cows and then all of a sudden the canyon opened up and there was this beautiful reservoir that stretches over 60 miles long. There's only one way in and one way out and I swear it's something that only the locals know about. It was beautiful! Very Lake Powell like.

My dad arranged the afternoon boat trip and we had a fabulous time. Thanks Dad for letting all four of us come and not being too upset when we made us late!

Of course I didn't take any pictures of the beautiful scenery. We did get this family shot- check out my hair blowing in the wind!


The boys couldn't wait to get into the water to swim. Once we got them in, we had a very hard time getting them out.


Gibson discovered the joys of looking in binoculars. It kept him busy for a good amount of time. We saw wild horses and mountain goats.

We celebrated Jared's birthday when we got home. How does one celebrate a birthday in the midst of packing? With a pan of brownies from Albertson's and a match as a candle! Don't feel to sorry for the guy. He was spoiled. He now has a new friend named Mac.

Happy Birthday Jared! We love you from the moon to the stars and back! You're the best husband and dad! We're so lucky you're ours!!

My Birthday Presents Arrived.....

I threw them into some frames so they'd be protected for the move but I plan on changing the frames up once we get settled! I love, love, love them and couldn't be happier with the way they turned out!!!!

A Few Goodbyes........

This week I had to say a few goodbyes to some people that have made our time here in Idaho so wonderful.

Wednesday night I went to dinner with three good friends, Beth, Tricia and Dani. These gals are a few of the gals from our Friday playgroup that I just love to be around. All of their husbands are pilots and every 18 months they kiss them goodbye as they deploy to defend our country. That is one of the many reasons I love these gals and look up to them. They are dedicated military wives and it's through them that I've really learned to appreciate the sacrifice that military families make.

With these gals we can talk about anything and we do! We drop our kids off at each others houses and we each look forward to Friday's at 9:30 when we can get together for playgroup. Dani subscribes to People magazine and passes it to Tricia who passes it to me and I pass it to Beth! It's a great system! We've shared recipes and advice on pregnancy and parenting. I'm sure going to miss them!

I've been involved in 2 book clubs here and this is one of them. We were named the Thursday night book club because none of us could think of anything else! Very original were we. These gals were from church and it was so fun to have a reason to get together once a month and share recipes and talk about books! I could be myself around these gals and for me, thats what makes great friendships!
Today was mine and the boys last Friday playgroup. We met at the park and it wouldn't be Mtn. Home if it wasn't windy so we're all a little windblown in this picture! We were missing Gillian and Dani and of course a few others who've moved in the past few months.

Friday playgroup was my saving grace when we moved here. I happened to attend library time with Gibson and there was a pregnant lady across from me who was chatty and seemed like such a social butterfly and I remember thinking, "If only I was her friend." Well, who would of thunk it but I had signed up to attend book club through the Officers Spouses Club on base and the first meeting ended up being at this gals house! She answered the door and I knew that I had found a friend and that's just what I had found.

Tara and I instantly clicked. Her husband went to medical school at the same school Jared went to dental school. Her son was a few months younger than Gibson and at the time she was pregnant with her second son and due about 4 weeks before I was due with Easton. She invited me to a military playgroup that she had organized a few years earlier and I was SO excited and have rarely missed a week since! It's been a huge blessing in my life and the girls that I've met have become great friends of mine.

These are some of the kids. Of course since Gillian and Dani weren't there we were missing Princess Maddy and Kaden. Collin {far left} and Gibson are about six weeks apart and Easton, Mehren {2nd from right}, and Kaden are all about 3 weeks apart. So the kids have really grown up together in the past two years.

We LOVE this playgroup and we were very, very, very sad to say goodbye today.

Goodbyes are so bitter sweet. The bitter part is of course leaving everything we've had here for the past few years behind. Yet we're so excited to be moving forward and to be starting our forever life. I've always related well to Meg Ryan's character in the movie French Kiss when she's talking to Charlie about the big white house and she talks about settling down and building roots. I need roots too and with this move, we're finally going to be able to put some roots down and start watching them grow. That's the sweet part.

A Day in the life of the Condie's:

Gibson just finished up his first round of swimming lessons. He loves the water as long as he doesn't get his face wet!....I took this picture at the end of his lesson. Notice the dry head.

He was a very animated kid and his favorite part of the lesson is when they'd go get the rings. The other little kids were diving underwater to get theirs, Gibson would use his toes to bring it to shallow water and then reach down and pick them up.


The last day of lessons they let the kids jump off from the side. Each of the kids did it unassisted....except for Gibson. He chose to have help. Needless to say, we'll be repeating the entry level of swimming. When I went to register him, the lady at the desk had the form printing when I realized I hadn't given her ANY of my information. "Don't you need my name" I asked? "oh, we KNOW who your son is!" I'm still wondering if that's good or bad, for my peace of mind I'm guessing he's just the cutest thing in the pool and so they know him:)

After lessons, I decided we needed milk and a few other items.....so we drove an hour to Sams Club, why? Just because. It's hot. We're bored. {okay, I'm not bored, we're moving in a few weeks, how could I possibly be bored? The boys are bored and we all needed a break}

So we drove the HOUR to Sams Club. I'm normally a Costco girl but I wanted to get the boys some life jackets and they were sold out at Costco so we kept going to Sams Club. When we got there I realized that I had the kids I swore I'd never have......yup. THOSE KIDS.

Easton had wet through his diaper and his shorts. So, I changed him and it was either put him back in soaking wet shorts or take him into the store in only a diaper and shoes.....

Gibson had lost his shoes. We changed him at the pool so we could get on the road and somewhere in the shuffle we lost his shoes.

So, we went into the store.....Seriously, don't judge me. I drove an HOUR to get there. I wasn't about going to turn around and go home.


This is us coming out of the store. It wouldn't be a trip to a large warehouse full of food if we didn't have the customary $1.50 hot dog and drink combo. Of course we also got a churro, water and ice cream.

Did I mention it was 104 degrees??



So while filling up with fuel, I realized that Sams Club has a CAR WASH. Oh yeah. How fun would that be on a hot day?? Gibson enjoyed it. {we already broke out the Sams Club purchases. Fruit Snacks and Juice Boxes....you know, 'cause he's hungry. It was only 10 minutes ago we ate our hot dog, churro and ice cream.}

Easton was, well too hot to care.

We got home and while I was putting away the groceries, the boys filled up the once was a sandbox but now is a pool, pool. {thanks Tara}

Easton, has NO fear and before I could get his swimming suit on him, he had jumped in and realized just how good cold water feels on a hot, hot summer afternoon. {click on picture to make larger}


We really tested the limits on his diapers. I didn't want to waste a swim diaper on the backyard {those things aren't cheap} so he ran around without one for a bit. He played for quite a while and then we closed the pool, ate dinner, got in our pj's and prepared for an early night to bed.

However,

someone forgot to tell Easton! He realized that swimming in the pool was just as fun in pj's!

So, that was a day of our week. Swim lessons and a trip to Sams Club. I wonder if I'll be this easily amused when I move to a larger town?? I guess we'll see!
