A year older

Jared turned the big Three Five {35} today. We celebrated with a family dinner with his dinner of choice. I made Salmon, chicken, rice with fresh fruit, salad with fresh berries, pasta salad and corn on the cob.

He didn't want a big to-do for his birthday so I invited his parents and the 4 adults were going to have a nice dinner in celebration of a nice boy. True to Condie fashion, at the end of the night there was 25 of us celebrating J-Rod's big advancement to the ripe 'ole age of 35. Good thing my mom has taught me the fear of not having enough food so there was plenty for everyone with leftovers.

It was great to have everyone here, the only downfall was that we ate all the birthday brownies and there weren't any left for a midnight snack or to have for breakfast the next morning.

I've gotten smart in my birthday planning and have started making the dessert of choice for the birthday boy instead of a cake. We all enjoy it so much better! Jared loves brownies so I made these yummy mint brownies. I forgot to drizzle the chocolate sauce on the brownie before the picture was taken. I. know. A brownie without chocolate sauce forever captured. It's embarrassing isn't it. {recipe below}

Jared asked me not to get him anything for his birthday and so I didn't. Sadly, our boys didn't listen and got their dad some much needed items like Jeans, socks and a new BYU t-shirt.

It was a great celebration for a great guy. Jared is the favorite around this house for sure! His sons think the world of him and well, so do I.

Mint Chocolate Brownie Recipe
1 C sugar
1 C packed brown sugar
1 C butter, softened
4 eggs
4 (1-ounce) squares baking chocolate
2 tsp vanilla
2 C flour
1/4 tsp baking powder

Cream together sugars and butter until fluffy. Beat in eggs until well blended; set aside. In a small bowl, microwave baking chocolate for 1 minute. Stir and continue to heat at 10- second intervals just until melted. Add melted chocolate to the sugar and butter mixture. Add vanilla. In a separate bow, stir together flour and baking powder; add to creamed mixture and mix well. Spread batter into a greased 9x13 baking dish and bake at 325 for about 25 minutes, or until a toothpick inserted in the center comes with a few fudgy crumbs. When brownies are cool, frost with Mint Frosting and refrigerate for an hour. Drizzle chocolate glaze over frosting before serving.

Mint Frosting
1/2 C butter, softened
1/4 C milk
1 tsp peppermint extract
5 drops green food coloring
4 cups powdered sugar
Mix butter, milk, peppermint extract, and food coloring together. Add powdered sugar and mix well.

Chocolate Glaze {sometimes it's just easier to use Hershey syrup}
3 T butter
1/2 C chocolate chips
1 tsp vanilla
Microwave butter and chocolate cips together on high power for one minutes. Add vanilla and stir. Randomly drizze glaze over frosted brownies.

Hey thanks for letting me come over and eat your food and celebrate the fact that you are getting more wrinkles by the second. You know... 35 is only 5 years away from 40 which is 10 years from 50 and THAT is half a century... are you ready for that? Thats pretty darn old if you ask me. I hope you have started looking into Adult Communities and maybe get some investments in Adult depends. Just a thought. :) ha... just kidding.. HAPPY BIRTHDAY JARED!!
